Overview: Over the semester, you have been practicing reading newspaper, journal articles or datasets, creating discussion questions and using those in class. In this unit on climate change, we will continue this practice, but because the topic can be overwhelming and depressing, we will focus on articles related to climate solutions: technical, personal and political.
As before, you will read the article, answer some questions, write up a personal response and then pose a discussion question. ,we are going to try this via a Discussion Board.
What change did NYC Hospitals make to their inpatient meals?
What did this do their food related carbon (GHG) emissions?
What has been the satisfaction rate?
What percent of New York City's GHG emissions comes from food? from transportation?
If you ate a plant-based diet, how much less GHG emissions would you be responsible for?
What was the cost savings for the hospital?
Step Two: Write Personal Response
Write your personal response ( a single Personal Response for both articles - not two different Personal Responses!)
Step Three: Write Discussion Question
Write one discussion question that addresses both articles.
Make sure your questions are aimed at your fellow students. Don't write discussion questions that are for an expert
To make your questions elicit more discussion, write follow up questions.
Ask questions to help make the topic more personal

Step Five: Respond
Answer a fellow student's discussion question by Sunday, Dec 1st at midnight
Only one person may answer a person's question
If someone has already answered it, you need to find another person's question to answer.
Bonus: include a plant based recipe or food that you have made and like.
My example: simple, cheap and tasty
Boil red lentils in water ( I add vegetable boullion cubes) ~ 2 cups lentils and 6 cups of water
Stir in curry powder and a can of coconut milk
I like to puree it at this point and add a little nutmeg
If you want to be fancy, saute onions before adding lentils and water
And really fancy, I will add the curry powder after the onions are cooked, stirring a bit to make the curry more flavorful. And you could add some types of chili powder to make it spicier.
Serve with rice or pita bread, naan, polenta, etc.
lentils (or beans) combined with a grain like rice, wheat or corn makes a complete protein.
