Nan is a 20 y.o. college student who has decided to become vegan for ethical reasons. She does not eat meat, chicken, fish or dairy products or anything that is made from animal products. She is 5 ft, 3 in tall, and weighs 92 lb. Her health is stable, but she does have iron deficiency anemia. Nan is a competitive diver. You gather from her diet history that Nan usually eats granola with almond milk and fruit for breakfast, beans, rice and vegetables for lunch, and veggies and tofu for dinner. She snacks on fruit and nuts.
