Purpose:
In this lecture, in addition to your class presentations this week, you will get an overview of the different considerations we have to account for when it comes to a diverse clientele and diverse dietary needs. This will help give you a framework to achieve the course objectives of being able to make appropriate meal substitutions for food allergies and diverse diets.
What to gain:
- What are the general; characteristics and safety of fad diets?
- What are the unique characteristics of each of the cultural diets presented?
- What food allergies are most common?
